I am Dave Herzog of One Fork Farm Caramels. My love affair with caramel began with my love of Oregon and the Willamette Valley community where I grew up. After taking a year-long job managing an organic farm on the coast of Maine, I decided to return home to Oregon and began looking for land to put down roots. As I began setting up a small farm in 2013, I knew right away that I would need something to do in the winter when the farm was slow. I wanted something that combined my love of cooking with my desire to support local agriculture, and that’s where caramel came in.
While tinkering around with recipes for a caramel that wasn’t made with corn syrup to sell during the holiday season, I stumbled upon a raw honey-based caramel that was out-of-this-world. What started as selling to family and friends quickly grew into something much bigger, and I discovered that caramel is really the perfect vehicle to showcase the fabulous flavors of the region. I’ve now expanded off the farm, and lease a building on the outskirts of McMinnville, where I share workspace with my other venture, Bellevue Country Store.
In addition to chickens and sheep on the farm, we have an amazing mutt named Bill and two barn cats, Sasha and Letters.
